"Tortilla" beef wrap with tomatoe salsa

I had been wanting to make this for weeks but never got round to doing it for whatever reasons. But moi finally made this dish for Tues night dinner. It was a relatively easy dish to do but took a bit more effort as the salsa should be done ideally at least 2 hrs ahead, so that it could "rest" and be infused with the flavours. The salsa's really easy and not only is it very healthy, it is drool worthy too. For my 4 wraps, I used 3 big tomatoes, seeded and diced. Throw in one finely chopped onion and garlic, 2 tbsp lemon juice, salt & black pepper to taste, 1-2 tbsp of olive oil, a handful of chopped spring onions, and you are ready to go..hmm..can add abit of balsamic vinegar for some added flavour if you want.

For the beef, I marinated it with salt, pepper & garlic and panfried it with sliced onions and green peppers. I think grilling/roasting the beef would have been better. The next time I cook this again, I'll definitly do that and maybe try it with chicken instead. So I thought I screwed up our dinner with the meat, but turned out the hubby liked it lots (hmm.. I didn't think he was lying to make me feel better..ha). The salsa went very well with the beef. I also added lots of shredded lettuce, mayo, panfried brown mushrooms and cheese. Warpped everything up in tortilla and popped it into the oven for 5-10mins. The melted cheese makes it extra yumz..

As u can see from the pic above, I also fried some fries and chicken for sides and oops! Only remember to take pic after I took a bite..hee..

Healthy fare..

Steamed tofu with gravy

I started with a very simple recipe in mind..steamed tofu with oyster sauce & spring onions. But as I put the tofu into the mircowave to steam, I thought of something different. I had never done this before, but remember seeing a chef did it on TV.
With no recipe on hand, I did what I could best come up with.

Gravy
1 cup water
3-4 tbsp oyster sauce (depends on how salty u like ur gravy)
1-2 tsp sesame oil
a handful of frozen mixed greens.
1 1/2 tbsp corn flour (aga aga)
1 egg, beaten
1 small clove of garlic, chopped
2 tsp oil ( I used olive oil)

Method
1. Mix corn flour with water, then add oyster sauce and sesame oil. Mix well
2. Heat oil in pan, throw in chopped garlic, fry till fragrant and add mixed greens, continue frying for abt 1 min.
3. Pour in liq. mixture from step 1, stir well and bring to boil, then lower heat. Mixture shld thicken by now.
4. Pour in egg slowly with one hand and with the other hand, gently stir gravy continously.
(think the chef said tis is to create "dan (egg) hua", or rather white streaks in the gravy).
5. Pour gravy over steamed tofu and serves hot.

Turned out pretty well, I'll definitly try doing this again some day, maybe with a little twist, say fried tofu and add some minced meat/prawns to the gravy..yumz..

Ham & Mushroom Pasta

Ham & Mushroom Pasta
Ingredients:
1) Cooked pasta for 2 - I used 3 colour pasta
2) 4-5 fresh brown & white mushrooms, sliced
3) 3 slices of ham
4) 1 onion, sliced
5) 1 clove of garlic, chopped
6) 2 tbsp of chopped green peppers (can add more if u like)
6) 1 tsp of herbs - I used french herbs
7) Dash of black pepper to taste
8) 1/2 bottle of Bertolli Mushroom Alfredo with portobello mushroom sauce (can use any brand u like or make ur own cream sauce with full cream & milk)

Method:
1) Stir fry onions till soft, add in garlic and fry for a few seconds.
2) Add in mushrooms, green peppers and ham. Fry for 1-2 mins and add in herbs.
3) Pour in cream sauce, stir and add pepper. Continue to simmer.
4) Add in cooked pasta when you see sauce boiling, stir to mix well.
(serves 2)

Jellyheart Cheesecakes

The very much talked about Jellyheart Cheesecakes!

I finally got the chance to taste this very famous and very popular cheesecake. Got the courage to order this even though I know cakes are bad news for my ever expanding waistline..sigh..

When I 1st opened my box, I thought I was paying abit too much for 20 pieces of tiny cakes, plus very little cheese at that..first bite and I was disappointed. After hearing so much about how great this cake is, I think my expectation was sky high. I didn't think it was outstanding.
However, when I tried it again later in the evening, I simply couldn't stop eating it. Stuff myself completely and felt totally gulity right after..but then I convinced myself t it was worth the calories.
Why?? Cos somehow..the not very thick layer of cheese went really well with the thicker layer of jelly. Tasted like jello..though small in size, I think it was just nice cos it didn't make me feel sick with a heavy feel like other cheesecake. This one was light and yummy!! The crust tends to crumble a little but other than that..I think they deserve a star!

And know what? I have already placed my 2nd order for these cutie cheesecakes!

Sunday Dinner..yumz...

Hubby decided it was about time for us to go on our much needed diet, so wanted something light tonight. So the wify whipped up some salad greens for the man..

But wait! Salad just didn't sound filling enough for a big man and one greedy wife..so I made a mini margherita pizza and fried some chicken to go with the greens...so was dinner healthy? Not so anymore. Sorry darling..but your diet will just have to wait. Ha..
